New use for leftover pulled pork

Hello All,
Like many of us I often smoke more meat on the Egg that can reasonably be eaten in a single meal. That means I often have leftovers on my hands and am always looking for good ways to utilize them. Today I stumbled across a winner and wanted to share it with you all.

I made a pot of lentils with leftover pulled pork and the two complimented one another beautifully. It's not the prettiest dish in the world, but it SURE tastes great. I'm not a measurements and recipes sort of guy, I more cook by eye but here's the gist of what I did:

Chop onions, mushrooms, carrots, and sun dried tomatoes. Brown lightly in avocado oil with salt, pepper, oregano, paprika, and granulated garlic. Add in lentils and stir, then pour in a box of chicken stock. Add water until lentils are covered by an inch or so. Bring to a boil and allow the lentils to soak up much of the water (~30-45 minutes). Once the water level drops to the top of the lentils add in the pulled pork and about another 1.5 cups water and return to boil. After another ~20 minutes the remaining water will have thickened to a nice sauce consistency and the lentils should be quite tender without completely falling apart.

The pork helps make the whole thing very filling and just a bit smoky. Adding it in late in the process but not AFTER the cooking means it retains a bit of texture but also imparts it's flavor nicely. I like it served just the way it is in a bowl with a little grated Parmesan cheese and some buttered sourdough toast. Give it a try some time and let me know what you think!
