Ribs question

Why is it my ribs usually swell up to 1/2 to 2 times the size compared to when raw? Apple juice in drip pan maybe?

    The only ribs that I ever saw swell up were in my chest.... as I took a deep breath to start tearing into those I just cooked.

    Why do you have juice in your drip pan? Not needed.  I put salt in mine. 

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    Yes it is elevated. Just don't care for the puddles in the pan. That and have done this way from day one of the Eggs.

    Also lots of time (hell, 80% of the time) no stone. This is the indirect.
