Ribs question

Why is it my ribs usually swell up to 1/2 to 2 times the size compared to when raw? Apple juice in drip pan maybe?

Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd. -
@Mickey ... what does the salt do that a bare pan doesn't? Assuming that both are elevated off the plate setter?
