Wet Aging Question

I ordered a corned beef from SRF back in November and it has sat in the fridge since. I just pulled it out this morning and noticed it had a Sell/Freeze tag on it dated 31Aug15. Still good to use? Safer to just toss it?
MMBGE / Large BGE / XL BGE (Craigslist Find) / SF30x80 cabinet trailer - "Ol' Mortimer" / Outdoor kitchen in progress.

    Maybe he will chime in

    wet aged meat in cryovac smells funkier then normal to begin with. So unless you have experience with this, your mind will be messing with you as it tries to convince you if it's good or bad

    good thing is, if it is bad, and that age you will likely know it

    You ordered it in November with a sell or use by tag three months earlier than the date you purchased? Am I reading that right?

    I have a cryo wrapped brisket packed on 10/10/15. I still don't know what I'm going to do with it. I believe Little Steven has one in the fridge from August.

    i might just cook it for S&Gs next weekend depending on if the smell kills me or not when I open it. It looks no different than when I bought it. Typically when I see cryo'ed meat that winds up being spoiled, the cryo appears puffy from bacterial waste(gas).

    Yeah if the cryo has pulled away from the meat there is air in there. Stay away from those regardless in my opinion. I would think the smell would be off. Rinse the meat thoroughly and make a judgement call. I think it's fine

    I ended up tossing it just to be sure. Killed me to toss a SRF product, but it's my own stupid fault.

    I still don't understand how you got one from SRF in November that was already past it's sell/freeze by date.  That doesn't make sense on its own.

    I had a Costco prime packer in my fridge, still in the cryo at least 3 months past buying it.  Smelled a little, rinsed and it cleared right away.  Cooked and ate it without incident.

    IT'S CURED!!!  It will be good in cryo in your refrigerator for at least a year.  It will be safe for a long time.  The quality of taste will degrade (or get better) with time.
