Steak fajitas. Pic heavy!

Went to get a FI steak, but only had skirt. Rubbed with Fajitaish by Dizzy Pig.
 Well the skirt had great flavor, but wasn't nearly as tender as the flat iron. More than adequate substitute, but a sub non the less. No conversion here. Still delicious though.

    Brandon, the fest is June 18. We would love it if you can make it. Hope to have good weather to go with our good times.
      Dad is slowed down a bit by age and his health, but still goes into the store every day. I know he would love to visit with you. That's what keeps him going, I'm convinced.

    Thanks buddy.  Will submit PTO for Sat and Sun.  Hope to be in the Dells week before, may have to extend the vacation.    

    Finding you guys back in the day with the classic forums dealer finder was the best egg related thing I have ever done.  

    Love everything about your dad.  He's old school, lives life to the absolute fullest......truly inspiring.
    As you know, great man is such an understatement.

    Looks great! That cut looks more like a flank steak to me. Skirt typically looks like a long ribbon with the "grain" of the meat perpendicular to the length. Any pics of the pre-cooked meat?

    Not sure. You could be right. The grain was very long the length of the meat. I cut across the grain, or at least I thought I did. I'll pay closer attention next time. It was longer prior to cooking. As the muscle tightened up, it shrunk in length more than width. The flavor was good. Either way, it was all they had available, so I cooked it.

    Yeah, you are right. If you look closely at the third picture you can see the grain running parallel with the length. I'll give skirt a chance if they have it next time. The flank was all they had. We live in the sticks.
