Low carb cook for you LC-HF people

a couple of favorite dishes my wife and I make for our low carb high fat diet. The first are pulled pork enchiladas... Yes you can grub Mexican dishes on this diet!!
Start by smoking your pork butt on your egg and do whatever with it for dinner. The leftovers however try this.
Mix in a little taco seasoning with the left over pork and warm up slightly.
Have your local grocery store deli slice you up some 1/8" thick oven roasted chicken breast slices ( this will be your tortilla, I have served to people with them not knowing it wasn't a tortilla, and they never noticed)
lay down some cheddar cheese on each slice
carmelized onions
pulled pork
roll up, top with the lowest carb enchilada sauce you can find. It really amounts to nothing carb wise.
top with loads of cheese
cook 350 for 30 minutes in the oven or egg for some extra flavor. Pull and let rest for 15-20. Garnish with some cilantro and serve with guac if you wish.
Sorry there were no pictures of me loading the enchiladas. Hands were dirty.
The other dish I have here is pulled pork cheese dip.
1lb pulled pork from the egg.
8oz cream cheese
1/2 cup sour cream
3 cups finely shredded cheddar cheese
1/2 cup heavy cream
1/2 tbs of your favorite BBQ rub
mix all and place in a dish. Smoke on the egg indirect 350 for 25 minutes.
It will be slightly thick, so it's better served with a fork.

For low carb tortillas take a look a Mission Fajita Carb Balance; 13g of carbs minus 9g of dietary fiber yields only 4g of net carbs.
These can also be used for a small pizza; add a little sauce and top with cheese and toppings. Taste just as good as real pizza.

Very very interesting, I like the tortilla idea. I have been doing a lot of Sous Vide turkey breast lately so I might substitute the chicken.Lenoir, N.C.

I like that tortilla idea. I have used Boston Lettuce for LC tacos but that is better.

+1 for the low carb tortillas. There are a couple of vendors in our area that have them, Mission being the largest. I also use these for pizza crusts (thanks @Mickey ).
