Butternut squash

We have a company that delivers fresh, organic vegetables to us weekly. One of the things I like about it is that we get some things that I wouldn't normally buy, so it expands our horizons a little, if you will. We got butternut squash this week. How do you all prepare this? I've seen soup recipes, but I'd rather do this as a side than the main entree. It doesn't necessarily need to be a grill recipe, but bonus points if it is.

I cut in half and deseed. Fill cavity with butter and brown sugar and bake either in oven or on egg. 45-60 minutes and have wrapped in tin foil if burning.

Peel, dice, toss with olive oil and whatever else you want and either roast in oven or skillet or foil pan on the egg. Let it get caramelized.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Not sure I've ever done butternut, but here are "a few" ideas... 3500 or so.

Pineapple Head and brown sugar is the shiznit on BNS. Cook indirect at 400ish for bout 1:15 - 1:30. When it probes like buttah it's done just like pork or brisket.theyolksonyou said:

Butternut Squash soup is great. Make sure you use salt, and spic.
