shredded the chicken, tossed with mole sauce.

sauced crust with mole sauce, layered with cheese, chicken, avocado slices, diced jalapeño, sesame seeds



yes, I use parchment

topped with chopped cilantro after it came off

    It's been forever since I've made pizza. I was asking the kids this morning what I should make this weekend and my 6 year old said pizza. I think he's on to something. Hopefully I'll have time to start dough on Thursday night.

    Yes it is. Since the weather got cold, it has been lonely. Looks like it might be almost 50* on Sunday. I'm thinking pizza for lunch and ribs for dinner might be the plan.

    Thanks - need a couple more cycles to nail it.  We thought we had cotija in the fridge but didn't, it needed something with a little sour bite.  This was the second one, heavier on the sauce helped.
