I need advice for home knife sharpener. Needs to be easy to use and puts a good edge on the knife. primarily to sharpen henkle pro series knives and a few cheap ones

Check out Chefs Choice sharpener.My favorite for a quick way to put edge back on is a diamond steel around 20.00.

My personal choice is a TORMEK! It does not have the following of the BGE, but lots for wood workers lust after it. This tool sharpens everything from knives and scissors to carving and turning chisels. It is a bit OT if all you want to sharpen is knives, but then when you die, the winner is the one with the most toys. I have a good friend that loves his Chef's Choice, 3-stage sharpener.[p]Good luck [p]

btg,[p]No recommendations but be aware that knife brands like Shun and Global (both Japanese) have a very different angle than the European brands and can be ruined by using most sharpeners.

btg,[p]Avoid grinding wheels unless you're a real professional and have to repair knives. One of the best systems is the EdgePro which you can find here . It will adjust to virtually any angle...

especially the single bevel variety, even using a steel on them would ruin the edge. a few strokes on a wet stone occasionally keeps them razor sharp if you dont mistreat them

<p />btg,[p]I use the Spyderco Sharpmaker. It has two angles and takes just a couple of minutes to put a edge on a blade that will shave hairs off your arm. It does serrated blades too. Spring Chicken echos GrillMeister's words. In fact, it was he who put me onto it. My neighbor was so impressed he got one too and he's not even smart enough to be an Egghead LOL. Could be because his neighbor has one...[p]I will say it took a few minutes to clean up the poor edges I had on my knives but once they were trued and properly beveled they could cut fine strips of newspaper from one end of the blade to the very tip. Even my cheaper knives. As for keeping them sharp it's just a matter of six or eight strokes on a steel and they are as sharp as ever. Edge Pro or Tormek are best....[p]Edge Pro Apex is a manual sharpner and about $180. Tormek is $500 - $600+ depending upon the accessories.[p]Toy Man - Edge Pro fanantic

btg,[p]Also, don't rule out water stones.... I never thought I'd get the hang of it, but now, all my knives are VERY sharp. You can buy an instructional dvd by emailing Murray Carter at carter.cutlery@verizon.net (he's a custom knife maker and made the video). Also, it's worth paying a visit to the Keeping Sharp forum at the knife forum . Lots of great people there too... The guys in the <a href-"http://www.knifeforums.com/forums/showforum.php?fid/26/"> kitchen knife forum</a> have been very helpful to me...
