Chicken Gnocchi Soup

Broke in my CI Dutch Oven finally, and will be hard-pressed to top this one as far as soups go.    Wasn't on the grill, so might try that next time.

    • 1 lb. boneless skinless chicken breast, shredded
    • 2 cups mirepoix
    • 2 teaspoons dried basil
    • 2 teaspoon Italian seasoning
    • 1 teaspoon poultry seasoning
    • 1 teaspoon salt
    • 4 cups chicken broth
    • 2 tablespoons cornstarch dissolved in 2 tablespoons water
    • 2 12 ounce cans evaporated milk
    • 2 1lb. packages mini potato gnocchi
    • 6 slices bacon
    • 3 cloves garlic
    • 5 ounces fresh baby spinach
    • 1 small pack Baby Bellas
    1. Place the chicken, mirepoix, basil, Italian seasoning, poultry seasoning, salt, and broth in a dutch oven.  I went with 325 degrees for about an hour and a half.
    2. Add the cornstarch mixture, evaporated milk, and gnocchi. Stir and replace cover (or add the stuff from step 3 if you've got it ready)
    3. Cut the bacon into small pieces and fry until crispy. Drain on paper towels and wipe most of the bacon grease out of the pan, leaving just a little bit for the spinach/garlic. Add the garlic and saute for one minute. Add the spinach and stir until wilted. Remove from heat. Add the bacon and spinach to the crockpot. Stir to combine.
    4. Let sit for another 30 minutes or so.   I was just over 2 hours total cook time, but just a matter of preference for how thick you want it.   
    Hopefully leftovers tonight are as good as first round.

  • Just as an option to try. I used chicken I smoked on the egg in my wife's chicken gnocchi soup and it added another level of flavor.

    As I showed this recipe to my wife for use of the Gnocchi thats been sitting in the fridge forever, she looked at it and said thats the recipe I just got from a friend who has made a soup.

    So anyway I do believe for Dinner tonight I will be getting this soup.
