14 lb turkey

I'm new at this egg thing. Liking it so far...
I have a 14 lb turkey defrosting in the fridge for a Friday cook. Any great recipes? I've read NakedWhiz and find a lot of focus on the gravy, and not much on the bird. Is indirect at 350 right? How long should it take? Any ideas on how to prepare the outside or what goes in the cavity? I appreciate your feedback.

    markymark,
Down in Cajun land we inject ours and usually fry them. However the best turkey I have had so far was on my egg. I coated it with EVOO and cajun seasoning. Injected it with a garlic and butter mixture. Placed it on a stand that you can get from BGE with a drip pan below. Set it up for 350 with some pecan wood chips and let it cook until the breast got to 185. I also placed ice cubes on the breast before putting it on the egg so that it would take longer for the breast part to cook. I don't remember how long it took but it wasn't much different than in the oven. I used a probe type thermometer to read the temp while cooking and pulled it off when the temp got to where it was done.

    markymark,
14 pound turkey took 2 hrs 20 min at 325 degrees indirect to give 172 degrees in thigh. We just used canola oil on outside. Inside stuffed celery, apple, onion. Followed Naked Whiz and iced breast for 30 min prior to Egging. Was wonderful. Moist breast meat and just right in the thigh.

    markymark,
Go the naked whiz site and check out Mad Max Turkey.Very good.

  • darnoc,
i think that's where he was looking, but he got caught up in the gravy and didn't fully read what i say about prepping and roasting the bird. .. .

  • mad max beyond eggdome,
True. Can you give rough times for a 14 lb bird. Is the breast temp supposed to be 160 or 180?

  • markymark,
at 325 dome temp, figure on about 15 - 20 minutes per pound (should take you about 3 1/2 to 4 hours). . .if you do the ice bag trick, the breast should be 160 when the thighs hit 180. ..if you let the breast go to 180, it will be one dry bird .. ..
