Chili Lime Chicken with Cucumber Tomato Avocado Salad

Last night we were talking and decided we needed a lighter meal for tonight's dinner after finishing the leftover short ribs and mac n' cheese from the weekend. SWMBO found this on Pinterest this morning and she thought it looked good.

However, we went with boneless skinless chicken breast instead of thighs. I had to work today, so she mixed everything up and marinated them this afternoon.
After work got the small egg setup raised direct around 300* and on they went

Flipped a couple times, rotated the grid, etc until they were around 160*-165*.
The thinner one finished first.

She also made this Cucumber Tomato Avocado Salad that was really good, paired well.

A little white rice that we had in the freezer from a prior cook, and here's my plate

I have a few pounds to shed after the holidays, my pants are getting tight.
I have to say, for healthy, this is really good, give it a try. Also, very little effort if you can get someone else to do all the hard work and you just show up and grill.

That looks great man. I have to agree- having someone else do all the prep is the only way to go!Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
