Pork, Collards and Peas for 2016

Almost forgot about the bushel of local peas we had in the garage freezer. Perfect timing!

Also had two leftover smoked ham bones in the freezer. The collards got the big one and the peas got the smaller one.

I gave the pork chops a quick and simple teriyaki marinade and threw those on the mini.

Good eats. And I've finally converted my wife into enjoying collards and field peas. She used to not like them, but I guess her pallet has adjusted. Either that, or she's just trying to be nice.

I season the water with a smoked ham bone, a little baking soda and a little brown sugar. Let that get to a boil, then add in your clean cut collards. Reduce the heat, cover and simmer for about 30-45 minutes. I salt and pepper towards the end. Nice looking New Years meal. We always have BE Peas and collards ( and filet mignon) on New Year's Day. I outdid myself last Thanksgiving and made 30+ Qts of collards so it was nice to break a package out of the freezer this year.Charlotte, NC
