NYE --> Feeding 20-25 people.. Advice Needed!

Happy New Year fellow Eggers... I am hosting a NYE party at my house. Expecting roughly 25 people mostly adults.. I am planning to do quite a bit of the cooking on the Egg... I have 1 defrosted 8.75lb Pork Butt and a frozen 7.5lb pork butt (only defrosted one expecting a few less guests)
Also doing 2 racks of St Louis Style Pork Rib.. And I have 2 racks of beef ribs in the freezer if needed..
My real debate is estimating about how much I need to cook to feed 20 drinking adults lol.. Should I defrost the other butt and do all the ribs? Should I go buy a brisket to go with the butt?
Suggestions and and advice welcomed!

In my opinion, you are going to need all of that food. Your 8.75# pork butt will only yield 50% of that weight once cooked.

You will definitely need all the meat you mentioned, unless there will be tons of sides. Forget the brisket, the pork and ribs are very forgiving for a busy holiday cook.Happily Egging since 1996, still egging on my original large BGE, along with 6 other Big Green Eggs of assorted sizes.

Yes.. There will be a ton of sides and appetizers as well.. @johnnyp people will start showing up around 8-9 I suppose lol.. Never know with NYE parties.. The meats will be wrapped and put in the cooler until it's time to get down! LolLarge BGE

I would go with three butts at least, as that would simplify the cook. As above, figure no better than 50% pre-cook weight yield. Load up the sides and don't screw around with the ribs, of either variety. Just an opinion so you know what the above is worth..Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

I think it depends on your crowd. All of my friends who are drinkers don't really eat that much when they are drinking. I always ended up preparing more food than I needed until I realized this.

I'm with Larry and the others. Keep it simple and do a few butts. They will be more than happy with the pulled pork, it's delicious. In our experience, two butts will feed thirty people as long as you have hors devours and sides. This will allow you to spend quality time with the guests and dramatically lower your stress level.
If you are hell bent on the ribs, then I would suggest cooking the butts in advance. Now. And heating them up. Then you just have the ribs with which to concern yourself.
