Never heard of chicken head meat tacos, I wonder if they include meat from the neck because there's hardly any meat on the head!Ozzie_Isaac said:Cool cook, and great discussion. Never seen chicken feet cooked before, but I do like tacos made from the head meat.canuckland -
I'm guessing that feets have a lot of collagen/gelatin, just like wings and oxtails, so it's the soup itself, not so much the footies, that benefits.XC242 said:When I was growing up in the 60's my parents would make soup using chicken feet. I really couldn't understand why cause about all they were were skin, fat and tendons. They didn't taste bad but I never saw the point of it. We weren't rich but certainly weren't poor so I don't know what My parents were thinking.
EDIT: and in the very next post Little Steven says it makes great stock."Hallelujah, Noel, be it Heaven or Hell,

And when you roast them for stock they are incredibly good right off the pan. I guess I tend to roast stock meat darker than I would if I was cooking a meal. Kind of like the skin on good wings.Steve

May have been neck too. A bit greasy, but good.I would rather light a candle than curse your darkness.

Looking good, Gary. Thanks for sharing, and, no, I don't think it's too graphic to show here, just what anyone would see if they went to an Asian market.Happily Egging since 1996, still egging on my original large BGE, along with 6 other Big Green Eggs of assorted sizes.
