Gambas al Ajillo

This Spanish dish is usually a "tapas" or small plate, but it is soooo good I made a main meal out of it.

Start with the best tomatoes you an find, toss with olive oil, and grill until charred on all sides.


Toss in a food processor, add salt, pepper, a dash of paprika, and 1/2 Tbs honey. Pulse a couple of times.

Marinate shrimp 30 minutes in 1/2 cup of the garlic sauce (below).
Grill shrimp, remove, and toss with the remaining sauce.


Toast bread on grill. Coat with the tomato sauce, drizzle with olive oil, garnish with parsley.

The marinade/sauce: cook 12 clove diced garlic in love oil, then add thyme, red pepper flakes, and 1/4 cup sherry, cook until sherry gone, remove from heat and whisk in 1/2 cup EVOO.
Very simple but tasty.

@kwdickert I get them at the local grocery store (HEB in my area), they are disposable and maybe $1, I typically get 3-4 uses
