    All my briskets look like a meteorite when they come out, and yours looks perfect.
     
    I'll make an unsolicited suggestion: instead of buying a Flame Boss, spend 1/4 as much and get a Kick Ash Basket instead.  It keeps the six holes in the Egg from clogging when the lump burns down and shifts, and I haven't had a temp fluctuation overnight since getting it (and it won't stop working during a power outage!).  
    Just an idea.

    @Botch, I have Kick Ash baskets in both my XL and Medium, so I am thinking that the FlameBoss will give me a little more control and security on longer cooks.  Thanks for the feedback.

    Great job! I also did a 72 hr sous vide flat, followed by a 3-hr smoke in the BGE after cold shocking. Doesn't look as good as yours though.
