Boneless short ribs
Long story - but cooking these for the family this evening. My brother gave them to me wrapped so I was not sure what I was getting. I thought they would have the big bones but it is the boneless rib meat. Going L & S, cherry with a little hickory. Slathered with a lil mustard and some homemade rub. 250ish right now.

Looking mighty fine from here! I think you will be very pleased. I would wrap them at 160 , just because they look a bit thin. Not necessity of course. Good luck, standing by.
