Guys I have done this for the past 40 years as you see below with just a couple of changes. I only bring this up as I have one in the fridge ready to go to Frisco (North Dallas / Daughters) to be cooked Christmas Eve (she has no Egg , yes I have offered her one). Thinking my next time I will Egg it at home. 
I use beef rump only and it sets a full 3 days. 
This is outstanding and easy. 


Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.
