I was going to do some Carne Asada for sure, any other must haves from you crazies?

Yes to tamales, both for seasonal appropriateness and deliciousness.
Make chili verde too. It's amazing and FAR simpler than mole.

Frees up the egg for other exploits.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

It depends on how many other people can cook and work together in a small space. Personally I would make lots of apps and other small ish plates. Unless you are going to all sit down Thanksgiving style. And personally tamales are a PIA. Guac, Pico, Queso in the crockpot, carnitas, meatball soup, fixings for soft tacos, I would use small 4 inch tortillas, lots of good cold beer and margaritas. And a Pinata for the kidsColumbus, Ohio--A Gasser filled with Matchlight and an Ugly Drum.

I lived in Albuquerque for 5 years, and one tradition I really liked (even though it's not food-related) were candelabrias:

Simple brown paper "lunchbags", with a bit of sand in the bottom and a candle embedded. I must be spelling it wrong, because it took awhile to find an image, they're actually quite common in the Southwest.
