I was trying a mix of woods this past week on chicken and found this combo on chicken was amazing.
I smoked the wings at 275 for just over an hour and 20 minutes. Pulled them then in a pot I added a stick of butter some Louisiana hot sauce a touch of vinegar to bring up the heat then tossed them in the sauce.
For my blue cheese dressing I used store bought blue cheese added blue cheese crumbles and a touch of sour cream to thin it out. Cut up green onions and top !
So good !

Looks delicious! They almost look breaded. Did you use corn starch or baking powder along with the seasoning?

Yes sir @Dyal_SC a light coating seasoning and of baking powder to render out the fat and set them back in the refrigerator for a few hours before smoking.Dyal_SC said:Looks delicious!
