Well, I finally had some time to cook on my new Komodo Kamado yesterday. I have been so busy at work and needed to unwind with a cook.
Mexican being my favourite cuisine, I figured time to make some carne asada using some flank steak. I mixed up my mojo and marinated the meat for 8 hours. I also hit up some shrimp and chicken with John Henry's Cilantro and Lime Rub. If you have yet to try John Henry's, I suggest giving their products a go. Cilantro and Lime is to die for, and his summer time peach is lights out on ribs.
Anyways, after marinating everything, I got the 23" Komodo Kamado Ultimate up to temp. this thing is a work horse and super responsive.
Here are the results, I added some home made pico de gallo and some other fixings.
