My Egg is finally here!!!!![p]I just got done assembling it, and I am getting ready to fire it up![p]WoooooooooHoooooo!![p]I'm going to cook some of that salmon I caught yesterday.... and then some ribs..... and then pulled pork... and.......

AlaskanC,[p]AwRight!!!![p]Makes me remember the day I assembled mine![p]I didn't know about this Forum for about 3 months after I bought, and at first I was overcooking EVERYthing! I wasn't accustomed to the efficency of a ceramic cooker. Discovered the Forum as I was getting into the groove and never looked back.[p]While you are seriously colder in winter than we in Chicago, you will be so pleased, as was I, that you can cook in the winter (something my 'W' transported from our former home in south Florida could not do). I've done ribs in -4°F. I know others can beat that, but it was such a thrill! I don't hate the cold, which might be unusual for someone who moved to Northern Illinois after a life in the sub-tropics. Actually, I hate what I can't do in the cold, and before I discovered the Egg, that included BBQ.[p]There is something really special about a bright, sunny, well-below freezing day when I have the Egg pumping away.[p]There is a couple we met at Waldorf this year who's handle is 'FourSeasonEgger'. I like that![p]An Egg makes life better in all latitudes, whether you are a Parrot Head or a ... Hey ... What do you call yourselves up there, anyway?[p]Good luck and ENJOY!!![p]DD

Bordello,[p]Oh you have no idea of how paranoid I am about flashback!! I have no doubt that in due time I will have a few too many beers and fall victim, but for now I am being very, very careful.[p]We should come up with some kind of badge for flashback survivors!

DobieDad,[p]I have to say that I am so fortunate to have found this forum before I got my egg. The education has been priceless!
And now that I have the education I need to build up the experience. I know that I will be out there rain, snow or shine using the egg![p]On a P.S. note - I am a dobiemom. I absolutely love the breed. I had to put down my 14yo dobermutt a year ago and I am trying to talk my husband into getting another one. He's dead-set against it.... but hey.. I talked him into getting me an egg!

Ok - here are some pics of what I made on my first cook. I made a slab of ribs and 1/2 of a filet of the salmon. I cooked both of them indirect with the plate setter and then finished them off direct. I used the Lazzari lump that SmittytheSmoker sent me, and also a handful or so of the apple chips he sent too. The ribs were coated with Dizzy Dust, and then finished off with my very last jar of my homemade BBQ sauce.
The salmon was wrapped in foil and layered with limes (I like it better than lemons), sliced onions and a sliced up stick of butter and coated in Tsunami Spin. I would have used dill as well, but I forgot it down at the boat.
When I cooked direct I pulled off the top layer of foil and pulled the limes & onions off to the side.[p]Anyway, my husband kept taking pics of me when I looked my worst(which is why I am laughing) but at least I'm not posting the one of me coming after him with the tongs telling him to STOP IT!!!!

That's tremendous! What a way to get your feet wet. That's a pretty advanced project for your first cook! You're going to be giving advice to all of us in the near future. BTW, let me know about that apple wood......

WooDoggies,[p]I was a wannabe egger for quite a while, and then I ordered my egg back in April..... and now here we are in June with an egg finally!
[p]I don't know if I will be a pro by the time you get up here, but I bet I will be a lot closer after your visit!

Mike,[p]I know - I can't believe I finally got one! The problem is now I am already wanting more..... I'm thinking a small. I want something I can take out on the boat.[p]My husband would shoot me if I even mentioned it! Heehee..
