Any Ideas on How to Cook Boneless Beef Short Ribs?

I bought some on sale yesterday and I'm not sure how to cook them. They're small enough that I'm afraid they might dry out on a low and slow cook and not sure they would be tender if grilled. Maybe smoke for about an hour and then braise them like a chuckie?
Any road will take you there if you don't know where you're going.

Smoke them for an hour and then wrap them. This will give you a sort of braise. Should help keep them moist as that is your concern. The initial smoke will give you proper smoked flavor profile. Use oak if you can. If you have a braiser, you could just leave the top off the first hour then lid. Same thing.

I've also done them without the foil and they still came out great. I like the fact that Restaurant Depot sells them as a slab.
