Did You Oil Your Pizza Peel?

I got a wood peel for pizza (of course). I don't plan to cut the pizza on the peel. I'm just wondering if it needs to be oiled the same way you oil a butcher's block.

  • I've put mineral oil on my peel before.....but I don't know if it has helped anything or not.

Yes, if it is unfinished and you want it to not split.

I have two of them, bought 20 years ago, that have never been oiled. I do cut the pies on the peel (usually) and they get whatever comes from the pepperoni, etc and then soaks in, but nothing else. Still in great condition. Made from unfinished glued up strips, no splitting... but it's only been 20 years.  =)

I hate it when I go to the kitchen for food and all I find are ingredients!

I'd oil it too.  Wood loves oil and it will help prevent splitting.

Ok, I retract that.  I do have a number of wood spoons and such that have split.  Really, wood will absorb moisture and dry out, in cycles.  Probably more important that it happens evenly.  Like weatherboard on a house, if you only paint one side it will cup.  And more likely than evenly treated wood, crack.

That's why oil is your friend, so long as you're consistent.  It's hydrophobic so water stays out, like a steaming pizza crust.  Oil it and enjoy it for many years.

mines never been oiled, it also worked better after the knife cuts started to build up. maybe washing it would be problematic, mine probably still has flour on it from the last cook =)

Never oiled, rarely washed.  Still fine after 20 years.

Yes, both of mine get maybe two coats per year.  I think it helps keep the cracking, warping chances to a minimum.  Try to keep as much water off it as possible, and dry immediately.
