    Dry aging is drying plus aging. Two different things

    your meat ages regardless of the manner in which you store it. Wet, dry, cured, whatever

    sith wet aging, it doesn't dry. 

    With the UMAI bags, it does. Dry. As well as age

    even a commando advocate of the first order, like me, will come to that conclusion

    some oxidation may be good, but a aeakness of commando aging is rancidity. Some appreciate it (it's a component of dry sausage, prosciutto, and dry aged beef), but it isn't a necessary component
