Quick Question - Only second time doing Butt - Fat cap UP or DOWN?

I am getting ready to put on 13 lbs of butts for an overnight.  They are in two pieces and I have read up on cooks times with a gap between the two.  But I can't remember when I cooked my only other butt, was the fat cap up or down.

Appreciate any help.

    Doesn't really matter. I go fat cap down with the reasoning being that if something sticks to the grid it's the fat and not meat bark.

    Yup...either way. OTOH the rub on a fat cap is a waste so I trim my butts back that way making my former fat cap area the future tasty bark.

    Doesn't matter. I go fat cap up because I usually have it on the pan fat side up. I just grab it and set it on egg.

    Like RRP, I cut it off so that I can expose meat, put rub on it, and enjoy more bark.  It's also less fat to clean out of the egg and reduces cook time a bit.

    Thank you all for the quick feedback.  Temp is settled in and I am trusting the wireless alarm to wake me if there is a problem.  Been a long day. 18 family for dinner, smoked two turkeys and fried two more.  Going to bed one tired pup.
