I don't have any outlaws cocming over just a bunch of freinds, but I've started the weekend cook as well. Just put on a 12lb chunk-o-chest. This is only my sencond time at trying a brisket. The first one was ok, I've got my fingers crossed and more eggperience under my belt this time! Have a great time tomorrow![p]Tom

Rocketman,[p]Here ya go. Other than cornbread or biscuits and the like I'm not much of a baker. But this pie is easy. It sort of has the testure of a brownie. This will make 2 pies using a normal sized crust (just don't fill too full), but I use the Oreo crusts which are a little smaller and I usually have some to throw away.[p]~thirdeye~[p]Chocolate Buttermilk Pie
1 1/2 cups chocolate chips
2 pre-made store-bought pie crusts (regular crust or Oreo crust) follow directions on package for pre-baking the crust.
7 eggs
1 1/2 tablespoons vanilla extract
1/2 teaspoon kosher salt
2 1/2 cups sugar
1 cup buttermilk
Whipped cream or ice cream for garnish when serving.[p]Preheat oven to 325 degrees F. Place a rack in the center of the oven.
Place the chocolate chips in a double boiler and melt over low heat, stirring constantly. (Can also melt in the microwave, see package for instructions).[p]Prepare the pie crust and set aside to cool. [p]In a large bowl, combine the eggs, vanilla, salt, sugar, and buttermilk, and mix with electric hand mixer. With a rubber spatula, gently stir the melted chocolate into the batter. Pour batter into the piecrust. (Don’t overfill). Place in oven on middle rack. Bake for 1 hour. Remove from oven and cool completely or refrigerate overnight before serving.. Garnish with store-bought whipped cream just before serving.[p]

Your off to a great weekend of cookin! I like them key lime pies. I make key lime meringue pie also, just like lemon meringue pie. It's a hit.
Today I made a Granny Smith apple tart in the egg, a big one at 12" wide. I'll post a pic tomorrow.

Cooking for 10 -1 4 people this weekend. Started today with 4 choice chuck roasts and did Clays Beef BBQ. They are still eating on them tonight. Son has had 5 sandwiches already.
Tomorrow is Rib day with 3-1-1 Ribs using Jack Daniels and Apple juice as we watch the Indy 500 and Coke 600.
Monday everyone will be leaving my lake home, so it will be a "quicky" lunch of Bacon, Burger, Dogs. Only instead of hamburger we will be using Deer Burgers. The deer burgers are real lean, so will be adding an egg and looking for some good results.
