Adding Wood Chunks During Cook

I am doing a turkey tomorrow am. Recently I read an article doing a slow cook but adding chunks of wood at various times throughout the cook. Ive also read that the initial smoke from those chunks is bitter. How do you add wood chunks during a low and slow cook?

IMO adding wood part way through the cook is not only not necessary, you are almost sure to oversmoke the turkey. The smoke that you put down on the turkey at the beginning will not go away. I'd be most concerned about the quality of the smoke when you put the bird on. Much higher chance of over smoking than undersmoking. Good luck!

My crowds always prefer less smoke to more, especially on poultry. I would disperse some chunks throughout and roll. That's my plan for the ham today anyway.

Poultry takes smoke very readily, and it's easy to over-smoke it. Mix a few wood chunks in with your lump before you light it and you should be good to go.Living the good life smoking and joking
