Roasted Jalapenos

Made this bad boys over the summer and have been enjoying them since. These are like a roasted red pepper but made with Jalapenos. I grew 5 plants and had a hell of a yield. So here Is how you make these gems.

Roast peppers until the skin is black.

Remove from heat and immediately put into a brown paper bag close for 30 minutes (helps the peeling process).

After 30 minutes remove from the bag remove the skin and seeds and lay flat in a baking sheet. (split them down the middle with you finger).

Soak in white vinegar for 5 minutes or a little longer then remove to another baking dish and lightly salt.

Pack them into a ball wide mouth jar. Cover with oil. I used canola oil.

You can store this for 6 months to a year like this in your fridge.
