For Steelers Sunday, some smoked wings. For a couple weekday lunches, some smoked salmon.
For Dinner, pizza night! A sorta Margherita (no Basil, add Pecorino Romano as my little one doesn't do Basil), and a Caramelized Red Onion and Prosciutto for Mommy and Daddy.

I wouldn't mind at all! I have a couple posts over viewing the epic trials of getting good pizza/calzone results, but you can start at this one as it's the method I use for pizza as well -> http://eggheadforum.com/discussion/1186561/calzone-s-on-the-ar#latest
The two biggest things I'd say really helped me get good control over it overall are (1) the pizza screens, and (2) dampening the stone a bit before you start. #2 is probably less of a necessity if you're not putting your stone over direct fire, but for my setup it's been very successful. Both ultimately help prevent scorching the crust before the top/middle is cooked desirably, so I'm sure you can control that other ways but I'd consider my way very simple.
That said, by no means do you need an AR for good results, I just have one so I use it. Most commonly the folks I see using their Plate Setter and then elevating their pizza stone above the plate setter seem to yield great looking results. Related, at our local EggFest this year the latter setup is exactly how the gentleman demo'ing pizzas cooked them all day and they turned out just great.
Best of luck, I hope to see some good results from you soon!
