like salmon I have used a dry brine on it to cure
but question is on other fish like King macs grouper snapper Amber jacks for best results would I need to brine those fish and what would be the best way to cook them

Kings I like to brine and smoke for a snack or dip. grouper, monk reds like to just place on cedar plank with lemon, butter and any seasoning in the mood for.
