i used some leftover pork loin and bacon to make a delicious omlet this morning (added onion, mushroom and cheese)

LOL that's EXACTLY what I did with mine last night only I used spinach and cheese with the left over chicken. Sorry no pic as I've just eaten it.

Chicken thighs and breast leftover from last night. Chopped and heated with onions and peppers for fajitas. No pics. Already did dishes.

Always brisket chili. Often brisket nachos. Use Doritos Scoops, a touch of sauce, cheese and jalapeño on top. Sour cream optional.
Bake till the cheese melts and destroy.It's a 302 thing . . . -
Pulled pork pizza and nachos
Leftover pork loin sliced deli thin on a good onion roll with gravy
Leftover spatch chicken for fajitas
Or......just graze on them when I pass the fridge.

Leftover chicken great in any casserole that calls for chicken. I often cook an extra chicken just for that purpose if I'm already doing one.

Brisket chili, brisket omelet, pulled pork tacos, smoked chicken pot pie, baby back grilled cheese, pulled pork pizzas, etc. Love the leftovers!

These leftover threads are always great. I've copied a lot of ideas from these threads. Like others, I do a lot of pizzas, nachos, tacos, mac and cheese, chili (my fav) etc Since getting a foodsaver (yeah, I was late to the party), I keep cooked pork butt, and brisket on hand at all times.
but, a lot of times I just eat leftovers as snacks straight out of the fridge - plain - no fanfare. I just love BBQ, and I'd much rather have a slice of brisket than a handful of chips or a candy bar.
