I need a good idea for a 3 hour cook

I thought about semi-turbo ribs but our guests don't care for ribs much, I think they like them but not their favorite. I kinda wanna showcase the Egg a bit and maybe do something with a little smoke. I really wanted to do a butt, but with work today can't do that. Appreciate your suggestions and ideas, thanks.

Jerk Chicken served w/ Rice and Peas and Banana Slices (and Rum Punch)
The sauce takes maybe 30 minutes. Best made 2 days before then marinate the chicken for 24 hour
I usually do breasts, leg quarters and and a 1/2 dozen wing teasers.
They will think they're in the Bahamas
Can prep in advance and cook low and slow (250 indirect) for 2 1/2 hours.

Making the marinate and marinating for a few hours works fine too.

I was thinking that stuffed pork loin might fit the bill. I've done that a few times around 1.5 hrs if I recall correctly.
Smokey and Nola those are all good ones especially prime rib/standing rib roast. I have one in my freezer right now but nowhere that I know of within a 45 min drive to buy a fresh one.In Manchester, TNVol For Life! -

How about 3 courses? Start with some of those tequila chipotle lime wings posted recently, move on to some ABTs. Finish with spatchcock chicken, tenderloin, steaks, or whatever with some veggies...Southlake, TX and Cowhouse Creek - King, TX. 2 Large, 1 Small and a lot of Eggcessories.
