BEST cajun chicken ever!!!

Since I got the egg a few months ago I decided to experiment with varying recipes for chicken, I always revert back to my favorite and about every person I have ever cooked for favorite chicken, I cooked this recipe for my sister-in-laws 21st B-day had five webers going, every person that ate and that I talked to said it was the best chicken they have ever eaten. Now with the egg its ten times better, the fella that told me the recipe won a competition 3 years in a row with it, thought I should share it with all of you.
start with whatever you like, thighs, wings, split breasts whatever, completely cover with Louisiana's original hot sauce, and I mean coat it on , then sprinkle liberally with SALT-FREE lemon pepper seasoning (I use Mrs. Dash), then sprinkle lightly with Tony Chacheres Creole seasoning, this is what will give it spice so be cautious on the creole seasoning, cook bone side down 45 min to an hour, then flip and cook till skin is crispy.

I'm down here in Cajun country. I'm going to cook some chicken tomorrow using some "Cajun Power Garlic Sauce" in place of the Louisiana's Original Hot Sauce btw I like Crystal Hot sauce better. [p]If you can get your hand on some "Cajun Power" products, they are really good.[p]Tony's Chacheres is good stuff! You can get hooked on it.[p]Did you cook your chicken direct or inderect and at what temp on the egg?

I'll have to check into that seasoning, I prefer to cook chicken peices direct at around 350, direct seems to get the skin crispier for me, however I'm still not a total expert on the egg yet, but have done it both ways. Crystal is good sauce, if your into hot sauce check out Panelas hot sauce website, I've ordered some from their website, they have some great products, I highly recomend the ten-point-buck sauce it's awesome on pulled pork, beef or venison, Later Jason

One thing that I want to try on the egg sometime is a Natchitoches style meat pie.....I wasn't familiar with them until I visited Natchitoches a year ago......FINE eatin'....
