I guess I'm heading to Costco. I didn't see those the other day, but I did see beef ribs with similar marbling that were cross cut like Kalbi with the oval bones, but they were cut 1 1/2 - 2" thick.

I've been sick all week, so I only took one pic last night. Too busy making the sides. My foodie neighbor moved, so I was kinda sad that I couldn't share some with him.
These were seasoned with salt, pepper and a lil granulated garlic. I went more aggressive than I did with the test cut. I seared all 6 of them off (thick to thin), then butter basted them with fresh thyme. This piece was for the wifey...she doesn't do blue rare.
As expected, the cuts are uneven, so some pieces weren't cut against the grain. This was a skinny cut, so I just cut it on a bias and rolled with it. They all ate very well and were melt in your mouth tender. Definitely worth the price tag.Just a hack that makes some $hitty BBQ.... -
I was just at Costco today and they had them in the prime section. Prime ribeyes were trimmed of the cap and the caps were $18.99 p/lb. I'll have to get some next after seeing these beautiesLBGE - I like the hot stuff. The big dry San Joaquin Valley, Clovis, CA
