beef plate ribs...cant find

so I keep seeing these post of huge dinosaur beef ribs but none of my local butchers sell plate ribs. Any advice on where I can get them online? Thanks for the help

    We (Snake River Farms) just started selling them as a test.  Though, they're Wagyu and huge, and as a result they're very expensive.  http://www.snakeriverfarms.com/catalog/product/view/id/2621/s/american-kobe-short-ribs/category/2894/

    thanks for the post but way too expensive. Please let me know if they ever go on sale. I have heard nothing but positive stuff about snake river farms and I will only order from you guys!

    They might be cut up and labeled as short ribs.  Not a rare cut at all, I'm surprised you're having trouble finding them.  Also, call some butchers. They put orders in to meat distributors that can get anything.   Just don't let them fleece you.

    usually see them as short ribs in the cheaper supermarkets and the back ribs off the prime at better butcher shops(i dont normally see short ribs in my local butcher shops but have never asked, they would order them for me if i did ask though

    so I guess I'm kind of confused. So the beef short rib is the same as the beef plate rib? Will a beef short rib be okay as a substitute to a plate rib?

    They're the same thing, but cut differently usually.

    i dont normally grill them, i like them braised and the bigger back ribs i low and slow but you should be good to go

    I guess I'm just looking for a meaty beef rib. Publix sells the back ribs for cheap but there is really no meat on them. I just want a brontosaurus rib that tips over my car

    buy a bone in choice rib roast and cut it into a boneless roast =)

    Short ribs are much more readily available where I am.  I go to the local Kroger and ask for the uncut short ribs that they keep in the back.  Always able to get a four bone uncut hunk.

    There are 2 kinds of short ribs. One kind is from the chuck section. The bones are almost round, and there is some fat marbling. The plate section short rib bones have a much flatter cross section. Typically, they have a strip of fat, and then a thin layer of meat and fat over that. The muscle layered over the bones is the same, but it appears to me that there is more tough connective tissue in the chuck end.

    To make things worse, depending on who you talk to, dino bones are either back ribs, or plate shorts.

    i dont know if ive ever seen the round chuck boned short ribs, its always flat bone cut or in rack form up here. i see the dino reference to short ribs here and never understood that =)

    Here's a good .jpg image showing the difference. The shop I usually get my plate ribs leaves another layer of meat and fat on top.

    There is another place I often get short ribs, don't think the mostly kids behind the counter quite know what they are doing. I've had packages from them that mix the 2. Here's a pic of some Korean galbi that show a mix of chuck and (mostly) plate short rib slices.

    Speaking of terminology, some years ago I did a lot of gardening. A friend of mine owned a green house, and we would talk about various plants using the Latinate names. My wife found that to be a little irritating until I showed her lists of all the common names for various plants. Some names were for completely different species. Meat cuts are about as bad. Must learn to speak in NAMP numbers.

    RD Stephen. Call first but, they normally have both beef back ribs and short ribs. Much meatier than most places.

    Chuck Short ribs usually have 4 bones when sold uncut and Plate Ribs usually have 3 bones.  They are definitely different cuts of meat from different parts (but close) of the cow.  Restaurant Depot sells both and the plate ribs cost about twice as much. I actually prefer the chuck short ribs since they have less fat than the plate ribs.  Restaurant Depot usually has boneless chuck short ribs also.  Lasty time I was at Restaurant Depot, the Chuck short ribs were about $3.75/pound and the Plate Short ribs were about $6.25/pound. The boneless chuck ribs were $5.79/pound.

    Edit:  Opps ... just noticed that you were looking for PLATE ribs ... sorry ... the following is true, just doesn't help with your search!

    Your local butcher most likely ordered a number of cryo sealed chuck rib packages.  They come uncut with two four-bone sub-prime cuts per package.  The butcher simply opens a package, cuts them into short ribs, marks up the price, and puts them out for sale. 

    If you want the full size ribs, ask him to show you the cryo sealed package  before they're cut into short ribs.  Then offer to buy the double package for a discount ... my butcher usually gives me a buck a pound off if I take them in the cryo package.

    PS ... you can tell him you want an NAMP #130 cut of meat, but good luck with that approach ... at the retail level, most don't know what that is.
