Noon kick-off tailgate foods?

Ok - need some suggestions for our tailgate next weekend since we have a noon kick-off. (Really wanted a late afternoon but don't control the tv schedules). We are traveling and staying the night before - so we are limited to coolers for keeping stuff cold to cook - and we will start out before the market opens to pick choice items - so we have limited options. We've got some snacks covered for prep the days before. We've got 2 butane burners and of course want to use the Mini-Max - please help me out with what we can prepare at the tailgate as we have a big group for this game.

I would use a griddle on the burners to toast the buns and to saute onions so you can keep the meat going on the MM.

Those are great @SmokeyPitt Only did them once and on an offset pit, but they came out stupendous.

I would smoke some goetta and a couple sausage fatties on the mini max and make eggs on the griddle.
Or, hot tub some brats on the Mini Max and use the griddle to fry up some onions and peppers.Steve

Well I did these yesterday and they were indeed outstanding @Griffin. Shout out to @NibbleMeThis.
I used Trader Joe's coffee BBQ rub I had on hand. I cheated and used Ken's Steakhouse honey mustard. The combination of bacon, onion, honey mustard is outstanding.
My family asked for these again for the Falcons game today.

Ok so had to do a test cook and since we didn't have anything for dinner tonight or lunch tomorrow- we dove into this cook- OMG!!!! This is a great meal!!! - we aren't eating breads these days so had with just pork & onions w/ glaze. I'm sold!!!!!SmokeyPitt said:
