I'm thinking 4 hours @ 131-132 as I saw someone else recommend? Then sear at 600+? Any other thoughts?

131F 10-12 hours. Then sear. 600 is fine but I typically sear at 500 just to brown and not for very long (no more than 1 minute per side). If you want to sear at high heat and for longer times you might want to adjust the bath temp down a bit. Four hours time in the bath will work but ten to twelve hours is the sweet spot for maximizing tenderness without sacrificing moisture loss. Also, I do not season until after bath.
