I love my MM and use it mainly for quick, hot, and direct weeknight cooks. But when we go to the lake I take it along and usually do something lower and slower. I like to turbo butts, but I never can get the dome thermometer to read above 250ish after putting a 6 or 7 lb butt on the MM, even after several hours. Over labor day weekend I cracked the lid and put an extra thermometer in at the felt level just to check it. The extra one read 350* at the felt line, perfect, the dome read 200*, nowhere near. I understand there is a difference in grid and dome temps, but shouldn't the dome read a little closer to reality? I've calibrated it several times.
I guess the cold meat keeps the reading high in the dome low on such a small egg? It's not a huge deal, just wondering if I'm alone with this? Thanks.

It's the cold meat thermal mass. I'm gonna say you checked to make sure the Tel-Tru sensing probe wasn't stuck into the meat (even just the tip
). That said the steam or superheat off the mass will throw off the dome thermometer. I have a cork just to make sure I don't ever stab anything I'm egging. Looking at the sensing probe there is a indented line and that must be in the egg or you won't read proper temps. Besides dome temp is just a guide.

@nphuskerfl are you saying that the TIP of the PROBE shouldn't be in the MEAT?
Sorry couldn't resist. I also use a cork to make sure that doesn't happen, I guess it's just the cold meat mass like you said.

Kevin, I've seen the same. Big ole pile of meat and the temp barely moves.
