Smoked Chicken and White Bean Chili with Bacon

Just found my new go to way to use up chicken from previous cooks. Shreded the leftover meat off of the bones from 2 chickens and used the bones to make a stock. 



Fried up some Applewood smoked bacon and added onion, spices and leftover meat. 




Added garden tomatoes, fresh corn and the white beans. Covered with the stock and simmered for a couple hours. 





Topped finished product with parsley and applewood smoked cheddar. Would've added more heat but this was family friendly.

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    Sorry but trying to teach these guys there is NO beans in a REAL bowl of Texas Red and then you post an outstanding cook of chicken soup. Once more gentlemen, no beans and damn sure no chicken in a bowl of red. 
    Now guys if you want to make a great chicken soup (and I sure do) we need to take a lesson from Wanasmoke.
