Well I went to bed and the temp spiked

Doing a pork butt and I put it on at 6 am. Fell asleep and woke up at 9 only to find that the egg had gone to 450f. Butt is only 150 and I'm in a panic mode right now trying to get the temp down. Egg does not like to cool down. I guess the lesson is " Don't fall asleep". My question is how do you guys recover or get the temp of the egg down. Ive been popping the lid every 3 minutes or so

Comments

  • stop opening the lid.  you add way more air to the mix that way than comes in thru the lower vent.

close the lower vent to your normal setting, and don't worry.

it will be done sooner but you can't screw it up

Don't keep opening the lid you're just adding more oxygen to the flame. Try spraying the coals with some water and that should quench the coals a little bit. Shut the top and bottom vents and wait.

I can't exactly recommend this, but I've done it several times. Get a water spritzer, open dome, and quickly spray the center of the lump. Extinguish part of the fire. You can also rub a damp cloth over the surface periodically.

Safest, wrap the food in foil, cooler, and let the Egg come down on its own w. all but shut vents.

  • I'd shut off the air flow to just a sliver, top and bottom vent. Eventually, it will settle.  I would NOT go spraying anything in there.

  • spraying the dome is fine.  for crying out loud these things don't explode when it rains on them.

I know this guy who pours ice water from a cooler into his egg to cool it off at tailgates. Can't find the pic though.

I hate it when I go to the kitchen for food and all I find are ingredients!

Don't worry about it.  You can take the meat out if you want and let it cool down some, but you can keep your cooked butt hot all day if it's done earlier than needed (or you could just let it ride).

Pork butt is very forgiving.  Throttle vents and calm it down.  No need to open and spritz.

Just get temp under control and let it ride.  If its done early just FTC.  You will be fine.

It was good.  I FTC'd and chopped the pulled pork. I had my knife going crazy and I had pork going every where. That's the way to go, chop it up. Cole slaw and pork on an onion bun
