Wings today, two new rubs

Cooking some wings later today, trying 2 new seasoning mixes. First is Habanero Death Dust from Oakridge BBQ. I got this in a sample pack, finally getting around to trying it. The second is Arizona Dreaming from Penzeys. It is salt free but a pretty good southwest kick to it. Dusted half the wings with each rub, then with corn starch. They are resting in the fridge until cooking time. I plan to do them indirect at 375, 30-20, then sauce with Anchor Bar wing sauce, and back on for 10 more minutes. I'll post another pic once I start cooking.

Ahhh the Anchor Bar! A buddy and I have been making the trip every year to a Bills game for about 10 years now and we always make sure we hit up that joint. Love that place!St Marys, Ontario, Canada LBGE -
Here is the plated shot. This was pretty much a perfect wing cook. The rubs were different, Habanero one was hotter, but great flavor with both, especially combined with the wing sauce (it was medium heat sauce). The skin was as crispy as if they were fried, and the meat pulled clean from the bone I actually prefer wings cooked this way. Normally a restaurant fries them, sauces, then serves, reducing the crispy skin you get from the final bake.
I did want smoke flavor on these, so used some Mesquite as it was a relatively short cook. Really good, ate them all
