Smoked - Stuffed - Pizza Filled - BBQ Chicken Breast

My mind went wondering during work today. What can I do with a chicken breast?......

My mind went to pizza. So I decided to stuff a chicken breast full of pizza toppings. I started with cooking the breasts on the egg butterflied until firm enough that I could add barbecue sauce and to bring in the house to add toppings/fixings. Inside the pocket I started with pizza tomato sauce. The next layer was pepperoni, followed by sautéed onions, sautéed mushrooms, sautéed green peppers, green olives, and basil.  The toppings on top of the breast was another layer of pizza tomato sauce, mozzarella cheese, and pepperoni.

I'm completely stuffed! Too much food. I did take a few pics along the way:

    That's pretty good thinking! I'd tear those up. I take it since you're stuffed they were as good as they looked?

    @Focker Thanks! The Boos has been very nice so far. I like the room and size of it. The best part is that it doesn't slide around the counter like my old plastic cutting boards would.

    I've be watching Craigslist for 12" planer and jointer as I would be interested in making end grain cutting boards as a hobby. Just not sure if I can justify the cost for the couple tools I need and what I could sell them for. Maybe just pick up one tool at a time and make them as gifts

    @leemschu Haha thanks! I wasn't too sure what to expect but was pleasantly surprised with the combination of flavors

    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    @SmokeyPitt Thanks! Not much of a bread person myself. The bread was more less for my wife. She could eat that whole loaf herself and probably lose a pound along the way. Not me. I tend to skip it most of the time. 

    After coming up with the chicken breast and pizza in my head I had to check online what others have done with this idea. I did come across a healthier option of these that were about 300 calories per breast. (This was with turkey pepperoni and other healthier stuff) They probably aren't too bad with less cheese and pepperoni as it's mostly veggies

    Carbs, protein, fat...I love them all.  I would like to take one of those and stuff it between two thick slices of the garlic bread for a nice sammich! 

    My wife is doing the "21 Day Fix" program and so I am doing it with her.  You are supposed to measure your food in these sad little containers. :(.  The one you can put some cheese in is the saddest.  I should really stop torturing myself by coming here.

    We end up doing chicken 80% of the time. It gets a little boring after awhile. I definitely should try something a little more strict. I count stand to lose 1 or 40 lbs

    Funny you mention it.  Been kicking that around myself.  Saw some awesome custom end grain countertops from Rick Odea back when I ordered my block.

    An extended winter project, would be nice to have a functioning countertop with easy maintenance.  Need to buy the new Bosch cooktop, range hood, sink, first. hahaha

If you can't win you have to start looking for other positive things I guess......I'd still be a Twins fan over a Cardinals fan! =)
