Zinc is fairly toxic at levels over 0.5g/day. That's a lot. You'll not ingest that that much with galvanized bolts. And you'll have to run at over 780F to melt the zinc where it could fall in the fire and turn into a gas (and condense on your food, yada yada yada).
I wouldn't eat all my meals off a zinc plate, but I don't think you're at risk with some galvanized bolts that hold up a grid.
