What Wok Size and Birthday gift ideas

My birthday is approaching soon and need to make a list. Top of the list is a Bison Airlighter and a wok.

What is the ideal wok size?

I'm assuming it needs to be big enough to limit airflow enough to prevent an inferno, but small enough to fit the egg. I have a woo for my Mini Max and nothing for a wok to sit in on my large. Should I ask for a woo and wok for the large or just get a wok to fit the MM? I know @mickey buys from a lady in CA and highly recommends her. If anybody knows who he recommends please chime in. I just need to know some wok basics if anybody can help.

Also, feel free to add ideas to my birthday list. The bigger the list, the easier it is for people to shop. Small dollar items are best.

  • I'm a big fan of the CGW 2 Tier Swing Grate. Other ideas are Meat Church Rubs, iGrill. If you really want a conversation piece ask for a meat blanket, my whole family is still laughing at me for getting one. I'm also a huge fan of meat baskets of all kinds. Nitrate gloves, BGE Tervis tumblers, BGE corn holders, get a meat brander with your initial it has its place. I'm assuming you have a thermapen. BGE patio lights if you have a place to hang them. BGE apron. Meat glove or oven mitts. BGE bottle opener that doesn't open bottles. SS Smokware cap. A supply of aluminum foil, some additional cookie sheets, small scale. That's just what comes to mind

    True story, I was trying to get this for your sauce/rub exchange and the company f'ed it all up. The dimensions appear to work for the MM and thought you would have liked it. Maybe you'll have better luck with them.

    For the large I recommend a 16" carbon steel wok. You will need a spider to drop it down in the fire ring. I got my wok from CGS. @mickey uses the Wok Shop.

    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    Long handled spatula & ladle makes woking much easier over intense heat. Also an assortment of Asian vinegars, oils, fish sauces, soy sauces and spices. It may be a little on the pricy side but a Zojirushi rice cooker is a once in a lifetime purchase that you won't regret.

    I missed you there by two days Mickey.  I mentioned your name and BGE and she didn't stop talking for 10 minutes.  She seems to be a big Mickey fan but thinks all of the egg people are crazy.  She was a blast to talk to.  She helped us out, asked a bunch of questions and filled the counter with everything we needed.  Very good advice and help.

    In the large, the spider is preferred to hold the wok.  Most set spider so it is up.  Recommended sizes are 16" wok for large, 12" wok for small or mini max.  Mini max woo can hold the 12" wok.

    A wok rack is good to hold the wok outside the cooker.  Most of them are aluminum, so not sure I would use the wok rack in the cooker.  It could melt if temp got away from you.   

    I would shy away from the metal style spoons or scoops.  All they do is scratch the wok.  Use wood instead.  Very few wok cooks need a cover.   Wok cover is better for making burgers.

    Need a good pair of gloves and maybe a wok brush.  Use the cooker to reseason the wok after each cook.  Let the wok reseason as the cooker cools down.  Set wok in cooker upside down so oil does not pool in wok bottom.

    I visited with Ms Chan at the Wok Shop last month too . . . great lady!  Here is a shot of her and I, and Below is a "copy & paste" for my WOK order for my Large.  Gotta buy some nice welder gloves too to help move the hot WOK into the house.

    If you're dropping the wok down low into the egg, I'd purchase some long gloves as well when cooking. Flare ups are a bitc$ and take hair and skin with it.

    I use this Lodge Pro-Logic 14" wok that I got from Amazon in my large BGE. I just drop the grate onto the fire ring put the wok inside, shut the lid and away I go. I actually prefer cooking with it on the BGE versus the gas stove in the house.

    Weed torch? $20 at Harbor Freight and the easiest way to start the egg in my opinion. I asked my sister when in College for HD aluminum foil. I now have 2 years worth of aluminum foil! I love practical and easy gifts. You can never have too many paper towels around.....

    I remove the upper ceramic piece, flip the woo over and set I right on to the fire ring then place the wok on to it. Been working well so far.

    . Thanks for the input all. I really appreciate the posts referencing the sizes of the woks you're using. This will be a new style of cooking for me. The past threads of wok cooks has inspired me to give this a try.

    I recently purchased these utensils from the Wokshop. I didn't know they came without the wooden handles in them. They say to just bang them down in there but mine keeps coming loose. Did you have that issue and what did you do to fix it?

    I started out using one of those heavy cast iron woks like you have. After I used a carbon steel wok I have never used the cast iron wok again. I do love cast iron for many other types of cooking, but just not woking anymore.

    I thought about that but I wonder if epoxy will bond to the metal very well. Maybe if I put a small dent in the metal handle and then put epoxy in it before driving the wooden handle into it.
  • Got mine from the wok shop as well.  Spider from CGS.  Wish I would have gotten longer spat hula  and ladle.   I got 17".  Wish I would have gone longer.  Hands get hot over the fire.  Drill a hole and wedge a dowel in (decorative look) or put a set screw in.
