My first crack at Pizza & Spinach Pie

Made a few different pies (pardon the lack of-round, had issues with the first pie sticking to the peel):
First was my all-time favorite pie... thin crust Potato with roasted garlic & onions, bacon, green onions, and cheddar cheese (finished with sour cream... not pictured):

Second was a flatbred style margherita pizza with riccota & fresh mozzarella, sliced tomatoes, oregano & basil:

Since I had the Egg lit already, I also threw in a traditional Greek Spanakopita (spinach pie with phyllo):

Wow, it all looks wonderful! For some reason, I have never had pizza with potatoes. Not that I recall anyway. But I LOVE potatoes so I really need to try one. A "carb pizza".

I wasn't familiar with spanakopita, but yours looked so good I had to look it up. Sounds great and looks simple to make. Not sure about the feta though. Not really a fan. Might try it anyway, or sub another cheese, maybe goat?I hate it when I go to the kitchen for food and all I find are ingredients!

You can't really taste the feta once it's in there... unless you leave huge chunks of it. For my potato pizza, I first roasted garlic in the oven along with the potatoes, onions (seasoned with salt & pepper), and bacon at 400 for about 35 minutes (bacon took less time). After I let them cool, I assembled the pizza.
Rolled out the dough, rubbed it down with olive oil & a bunch of mashed cloves of the roasted garlic. Tossed on some freshly graded cheddar cheese, along with the potatoes, roasted onions, & the bacon. Finished it with the green onions and tossed it on the Egg @ 600 until it was done. After letting it cool for a few minutes I threw on some sour cream.
A local pizza place makes one similar to this and it's delicious. I added the bacon and roasted garlic that they don't, and I'm glad I did. I think i could live off roasted garlic, feta cheese, olives, and fresh bread (must be the Greek genes). -
