    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    Newtoy, I've only got 3 cooks under my belt so far and have only done simple stuff (steak, chicken thighs, wings). The wife is going out of town for a bit in a few weeks, I'm planning on going "wild".... Pastrami, shoulder, roast....getting my low & slow time in

    Thx for supporting me through this journey. Will be posting more this weekend as I venture into the holy grail of ribs.  My husband is quite happy with his gift to me, the big green egg.  I love it although it does a number on my eye make-up (thought you'd want to know) and I sure smell like smoke. So, don't open the egg as much and wear glasses.  Thx all.
