Srirachi Apricot Chicken, Mexican Corn, Grilled Scallions

Man this was really good. Here is the finished result:

Cooked the chicken raised direct, pulled and set aside.

Seasoned the corn with EVOO, salt, pepper and chili powder and cooked raised direct. When the corn were almost done, seasoned the scallions with EVOO, salt and pepper and put on with the corn. Just barely cooked the scallions.

Put the chicken back on, basted heavily and repeatedly while flipping the chicken until there was a nice glaze.

This is the recipe for the sauce:

- 1 cup (10 ounces) apricot jam
- 2 tablespoons Srirachi sauce
- 2 tablespoons unseasoned rice vinegar
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon fish sauce
- 1 bunch scallions, ends trimmed
- 8 chicken drumsticks (1 1/2 to 2 pounds)
- 2 tablespoons olive oil, plus more for the grill
- Freshly ground black pepper

Looks really good! Did you use the srirachi with the green top? The reason I ask is that Trader Joe's makes their own brand and I actually like it much better than the most common brand out there. Either way, it looks like you had an awesome cook on this one.

@CPARKTXApparantly, srirachi is a generic condiment like ketchup or mustard, so there are other brands out there. The stuff with the rooster on the front and the green twisty top is just the market leader.CPARKTX said:Thank you @theyolksonyou.

I haven't tried others but bought the Trader Joe's brand and it was amazing. Better than the rooster brand IMO.

Man, that looks good. Would love to try it. Bummed out that the wife does not like fruit, or any fruity sauces or glazes. Not worth the effort to do it just for me. Maybe Duke will take after his Dad and we can do those and leave some plain ones for Mrs. G.
