Costco Boneless Beef Shortrib Whole

This is new to me, ever do one? I'm thinking cook same as pork shoulder or brisket to IT of 205 with some oak smoke and S&P, render out SOME of the fat. While I check run my refurbished boat. Cheers!

These are really good.I have done them the way you mentioned and they came out good but I like them done in a Dutch oven better.

Any pics of the meat? I'm interested in what it looks like (whole). Plan sounds good to me as said above.

I'd also like to see a picture. The only ones I've seen at Costco are already cut into single rib "steaks". I'd prefer to get the whole slab - luckily Restaurant Depot sells the boneless chuck short ribs as a whole slab.

Think it was about 5 hrs at 265-300F until IT hit 215F

Sliders with just horseradish. All in all a good coo -
Cook's Illustrated uses them a lot in different DO recipes like stews and chilis. @SteveWPBFL , those look great. I have never seen that particular cut of boneless chuck short ribs at either of the 2 Costco's I've been at recently. I'm going to have to ask the meat cutters the next time I go. Since it is in cryovac, I'm guessing they get them in that way and then cut them into "steaks" when they put them out at our local Costco. Maybe they'll sell me a whole cryovac like you had.
