Gonna be a late dinner tonight

Pepper Stout Ale(its all I had) Beef is one of my favorite cooks. I started my chuckie a bit late so won't be eating for a while. Chuck roast has been on for 2.5 hours @ 250, probably 30 min before I start the braise. Man I can't wait. Got some ciabatta buns and going to try a bit of goat cheese and horseradish on it, sounds good to me, we'll see.

Finally, it was worth the wait. I'm always surprised at how good this is, the goat cheese and horseradish was a great combination. I usually do mayo and provolone but I think I have found my new standard.
